All Sorrows are less with Bread

Banana Bread - Gluten Free / Vegan

Ingredients :


  • 224g Brown Rice Flour

  • 1 Teaspoon Baking Soda

  • 1/2 Teaspoon Baking Powder

  • 1/2 Teaspoon Salt

  • 198g Coconut Sugar

  • 80g Coconut Oil, Melted

  • 2 - 3 Ripe Bananas

  • 1/2 Teaspoon Vanilla

  • 89ml Water

Method :


  1. Preheat Oven to 350 F/ 175C/ Gas Mark 4 and prepare loaf pan with parchment paper or use a silicone loaf pan.

  2. In a medium bowl mash the bananas with a fork and add the melted coconut oil - you can melt the oil for 20sec in microwave or by bain marie - stir well.

  3. In a separate bowl sift together the Flour, Baking Soda, Baking Powder and Salt.

  4. With the Bananas mixture add the Sugar, Vanilla and Water and mix until well incorporated.

  5. Start adding the flour mixture to banana mixture and mix well. During this process you can add some nuts such as Pecans or Walnuts , some cranberries, goji berries , chocolate chips etc.

  6. Once all is mixed well spoon into prepared loaf pan and bake for 40-45minutes or until a toothpick / knife inserted in the middle comes out clean.

  7. Cool for 30minutes in pan , once cooled remove from pan and place on desired plate.




You can top up with some healthy toppings !! Like Coconut flakes, Pecans, Pistachios etc
