Red Velvet Oreo Brownies

Ingredients :
2 Large Eggs
115g Unsalted Butter
200g Sugar
2 tsp Vanilla Essence
21g Cocoa Powder
1/8 tsp Salt
1 tbsp Red Liquid Gel or Food Coloring
3/4 tsp White Vinegar
95g All Purpose Flour
Ingredients for Frosting and Ganache :
60g Butter, softened to room temperature
210g confectioner's Sugar
30-45 ml Heavy Cream
Half a packet crushed Oreos
Around 60g of Dark Chocolate or preferred chocolate
Method :
Set out butter you need for frosting so it will softened for frosting while brownies are being prepared .
Pre-heat oven to 350 F / 175 C/Gas Mark4
In a small bowl beat the 2 eggs together and set aside
Melt butter in a large bowl ( 30sec if using microwave)
In a separate bowl stir in 1 cup sugar, 2 tsp vanilla, cocoa powder, salt, food coloring and vinegar ( mix each of these ingredients in the order mentioned)
Mix in the eggs with the above mixture and fold in the flour until completely incorporated ( do not over mix)
Pour batter in prepare pan and bake for 22-24 minutes or until a toothpick comes out clean
Allow brownies to cool for 30 min.
To prepare Frosting and Ganache :
Beat butter on medium high speed until light & creamy - about 1 min.
Add confectioner sugar and 2 tablespoon heavy cream , beating on medium speed until creamy.
Add 1 more tablespoon cream until frosting has a spreadable texture.
Fold in the crushed Oreos.
Lift the cool Brownies out and spread with frosting.
Place into refrigerator for a couple of minutes for frosting to chill.
Until frosting is setting prepare ganache by melting Dark Chocolate with heavy cream, preferably by bain marie.
Once chilled spread over with Ganache and chill for 30 minutes.
Top up with some crushed Oreos (optional)
